Food Beyond Gravity is a circular food production system that we are developing for the lunar base.
This system uses organic waste as a main feedstock, and converts it via two decoupled fermentation stages into high value nutritious protein.
The novelty of the system is in the combination of the two stages, and in the design of the system. The two stages allows highly controlled conversion of waste into safe food product, by having a simple intermediate between the two steps.
Some parts of the technology are already scaled up on Earth.
The same system could also be used in space or on Mars.
Food Beyond Gravity is being built in collaboration with several partners and will be submitted to the European Space Agency for additional funding in the next 3 months.
We will present this project in a few weeks at Space Resources Week in Luxembourg.
